I absolutely LOVE pasta. However, I do not love the heavy feeling I get after eating way too much of it. I also happen to be gluten free which creates an issue when I want pasta. I decided to try spaghetti squash and now I can’t get enough of it.
1 spaghetti squash- cut in half horizontally with the seeds scraped out
1/4 cup water
1 jar of your favorite spaghetti sauce OR you can make your own if you’re feeling fabulous
1lb. ground turkey
2 tsp. salt and pepper
1tbsp. minced garlic
2 tsp. cayenne pepper
1 tbsp. each oregano and basil
1 egg white
Pour 1/4 cup water in a microwave safe dish. Place one half of spaghetti squash cut side down in dish and microwave on high for 17 minutes.
Meanwhile…Pre heat over to 375. Mix together ground turkey, egg white, basil, oregano, salt, pepper, cayenne pepper and garlic. Form meatballs from mixture and place on a baking sheet lined with tin foil. Place in over and bake for 22 minutes.
Heat your favorite sauce on the stove top.
Once the spaghetti squash is finished in the microwave remove from the microwave safe dish. BE CAREFUL- it will be HOT 🙂
Scrape the inside of the squash with a fork- it will look like SPAGHETTI!
Once sauce and meatballs are finished pour sauce on top of your spaghetti and place meatballs on top. Add some parmesan on top if you feel like getting fancy and ENJOY!
