This soup warms my soul! All you need are some healthy veggies, ground turkey and the super grain QUINOA. Enjoy!
Heat EVOO on medium high heat and add garlic.
Sautee garlic, chopped onion, and bell peppers in a tiny bit of EVOO in a soup pot (about 4 minutes).
Add ground turkey and your favorite seasonings and let it brown.
Once the ground turkey begins to brown add in:
-chicken or veggie broth (about 4 cups) and one cup of water
-one can diced tomatoes
– chopped kale
– one cup quinoa
Once you have added in the above ingredients bring the soup to a boil and cover for 20 minutes.
Serve hot and top with a bit of shredded parmesan cheese if desired! Filling and Healthy- it does’t get better than that!
